When you put an image on your web page, you have an option to specify “ALT text”. The original intent of this text was to show something in place of that image if you didn’t want to wait for it download. (It’s from the very, very early days of the web.) Now it is used to describe the image for image-impaired users and software so that can’t actually interpret the image. Search engines use this text to determine what the image is, and it factors into search engine rankings.
In general, ALT text should describe the image using your target keywords.
